About a month ago my sister Laura made red pepper jelly for everyone. This is a recipe that my Aunt made, for as long as I can remember. Ron loves red pepper jelly, so Laura gave my Mom a jar for us to take back to NC, for when we got there. I left it there. :(
So, I asked Laura to give me the recipe, and I bought the red peppers. I only bought 3, the recipe calls for 6, because I was thinking we didn't need that much of it. I was wrong. Ron saw what I made yesterday and told me it wasn't enough. LOL
This morning I went to the farmers market in Oak Ridge and bought peaches, corn on the cob and tomatoes, and I ran to the grocery store and bought 6 more red peppers. On my way home though I stopped at a stand near by and bought more tomatoes, (you can never have enough home grown tomatoes), zucchini and more peaches. I came home and started my first ever attempt at canning, I made sugar free peach jam. The recipe made 4 8oz jars, and there was a tiny bit left over that I tried on some toast.
OH. MY. GOODNESS. I think I died and went to heaven.
I had enough peaches left over to make another batch, so I did, along with 4 jars of red pepper jelly. I am thinking that the 8oz jars are too big for the red pepper jelly, but Ron seems to think differently. So in total I have 9 jars of peach jam, and 4 jars of red pepper jelly.
I am so into canning now. Ron suggested that I make my Moms tomato and zucchini recipe and can that. Excellent idea. I also want to try to make peach and raspberry jam, sounds so yummy.
Yes, I have lost my mind. One more thing for me to make. But, this was so much fun. And oh, my first try and all 13 jars sealed. woohoo.

I went to the craft store today. It looks like I sold 2 cards this month, but I still owe her 3, from the mistake last month. I made a Christmas card the other night, and I like it. I think I will make some boxed sets. I need to buy the boxes.
